Muffin's

I am not sure if I translate everything well. But I try ?!
English and American muffins
There were originally two kinds of muffins, English and American, each a different flavor. English muffins were made from yeast dough and baked on a griddle type (similar to scones). American muffins were baked in individual ramekins because the batter was thin. Muffins are centuries old and in the course of time countless variants of thought.

 
Sweet or savory
Muffins can be sweet or savory variations in baking. Depending on the chosen ingredients, they seem more like cake or bread. They are eaten as breakfast or a snack with coffee or as a snack.Based on the dough
The ingredients of a muffin include:flour, baking powder, sugar, eggs, butter or liquid vegetable oil, milk (buttermilk, yogurt or sour cream).
The more sugar and butter, the more it starts to look like a cupcake.



Muffin Form
There are convenient muffin forms of both silicone and metal bakeware. They can possibly bake in paper cake case although sometimes difficult to let go.

 
Recipe Basic Muffins (12 pieces)

* 275 grams self raising flour (or part whole wheat flour, oatmeal, granola or cocoa)
* 1 teaspoon baking powder
* 100 g sugar (or syrup, cane sugar, honey)
* 2 eggs
* 240 ml milk (or buttermilk, yogurt, sour cream, cottage cheese or fruit juice)
* 0.5 tsp salt
* 100 ml liquid butter (or vegetable oil, melted butter)


Tip: Mix the ingredients together briefly, it's okay to be a little lumpy. Too long mix makes for tough, dry muffins.You bake them at 200 degrees for 20-25 minutes in a muffin pan or paper cake case.


Variations
You can B.V. 100 g of the following ingredients can be added (or combinations thereof):
apple pieces, cinnamon, raisins, coconut, chocolate, blueberries, raspberries, mango, walnuts, pecans, hazelnuts, almonds, bananas, dried fruit, mixed spice, spices, cherry, poppy.Savory
ham, salami, cheese, onions, olives, spices, peppers, pumpkin, onion, leek, bacon, spinach, mushrooms, dried tomatoes, salmon, mustardDecoration
The top can also finish with (chocolate) icing, whipped cream, fruit, nuts, etc.

Sample Recipe

 
Savory herb muffins (12 pieces)

275 g self raising flour

1 teaspoon baking powder

0.5 tsp salt

150 g ricotta or cottage cheese

100 ml milk

100 g melted butter or oil 100 ml

2 eggs

2 tablespoons chopped parsley

1 tbsp fresh chivesthyme and oregano
 

1 tablespoon chopped dried tomatoesgrated cheese
Preheat oven to 200 F. Mix flour, baking powder and salt. Add milk, ricotta or cottage cheese, butter and eggs. Spoon the tomatoes and herbs through. Spread the batter over 12 molds, each 2 / 3 full. Sprinkle with grated cheese. Bake the muffins about 20 minutes.


Chocolate Muffins (12 pieces)
240 g self raising flour

35 g cocoa

1 teaspoon baking powder

0.5 tsp salt

85 g sugar

Z. 1 vanilla sugar

2 eggs

100 g butter or oil

240 ml milk
100 g chocolate chopped
Preheat the oven 200 F. Stir the flour, baking powder, cocoa, sugar and salt. Add the eggs, milk, oil / butter and vanilla sugar. Stir the chocolate pieces finally through. Fill the muffin tins to 2 / 3 with batter and bake for 20 minutes until tender.
